Description

Vanilla Phyllo Custard Squares are a luxurious dessert combining silky vanilla custard with crisp buttery phyllo layers, topped with whipped cream and pistachios.


Ingredients

  • 2½ cups whole milk
  • ½ cup heavy cream
  • ½ cup sugar
  • ⅓ cup semolina flour or cornstarch
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 2 eggs + 1 yolk
  • 810 sheets phyllo dough (thawed if frozen)
  • ½ cup melted butter or clarified butter
  • Whipped cream or sweetened whipped mascarpone
  • Ground cinnamon
  • Chopped pistachios

Instructions

  1. Prepare the Custard: In a saucepan over medium heat, warm the milk and cream until steaming. In a separate bowl, whisk sugar, semolina (or cornstarch), and eggs. Gradually add the warm milk mixture while whisking constantly. Return the mix to the pan and cook over low heat, stirring until thick and smooth. Remove from heat, add butter and vanilla, and let cool slightly.
  2. Layer the Phyllo: Preheat the oven to 350°F (175°C). Butter a baking dish and place half of the phyllo sheets inside, brushing each with melted butter. Let the sheets overhang slightly for a rustic look.
  3. Assemble & Bake: Pour the warm custard evenly over the phyllo. Fold the overhanging phyllo over the top, then layer the remaining phyllo sheets on top, brushing each one with butter. Bake for 35–40 minutes or until golden brown and puffed.
  4. Cool & Chill: Allow to cool completely to room temp, then chill in the fridge for 1–2 hours to fully set.
  5. Serve & Garnish: Cut into neat squares. Top each piece with a dollop of whipped cream, a dusting of cinnamon, and crushed pistachios for a bakery-style finish.
