- 1 block (200g) feta cheese
- 2 cups cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 12 ounces pasta (penne or fusilli work great)
- 1/2 cup fresh basil, chopped
- Zest of 1 lemon
- Juice of 1/2 lemon
- Red pepper flakes (optional, for heat)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, place the block of feta cheese in the center and surround it with the halved cherry tomatoes.
- Add the minced garlic, olive oil, dried oregano, salt, and pepper over the feta and tomatoes. Toss gently to coat the tomatoes.
- Bake in the preheated oven for 25-30 minutes, or until the feta is soft and tomatoes are blistered.
- While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and reserve 1/2 cup of the pasta water.
- Once the feta and tomatoes are done, remove the dish from the oven and stir everything together to create a creamy sauce.
- Add the cooked pasta to the baking dish and mix well. If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.
- Stir in the chopped basil, lemon zest, and juice, mixing until well combined. Adjust seasoning with additional salt, pepper, and red pepper flakes if desired.
