- ½ small red onion, thinly sliced
- ⅓ cup fresh mint leaves, torn or sliced
- 150 g feta cheese, crumbled
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lime juice (or lemon juice)
- ¼ teaspoon sea salt
- ⅛ teaspoon freshly ground black pepper
Instructions
- In a large serving bowl, combine the cubed watermelon, sliced red onion, and mint leaves.
- Drizzle with olive oil and lime juice. Sprinkle with salt and black pepper. Gently toss to combine.
- Add the crumbled feta cheese and toss lightly, or scatter on top for a decorative finish.
- Serve immediately, or chill for up to 30 minutes before serving for extra refreshment.
