Ingredients

Scale
  • 5 cups seedless watermelon, cut into 1-inch cubes
  • ½ small red onion, thinly sliced
  • ⅓ cup fresh mint leaves, torn or sliced
  • 150 g feta cheese, crumbled
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lime juice (or lemon juice)
  • ¼ teaspoon sea salt

  2. Drizzle with olive oil and lime juice. Sprinkle with salt and black pepper. Gently toss to combine.
  3. Add the crumbled feta cheese and toss lightly, or scatter on top for a decorative finish.
  4. Serve immediately, or chill for up to 30 minutes before serving for extra refreshment.

Notes
