Description

A refreshing and creamy twist on classic lemonade, perfect for summer days.


Ingredients

  • 1 cup pink lemonade concentrate
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup ice
  • 1 tablespoon lemon zest

Instructions

  1. In a large mixing bowl, combine 1 cup of pink lemonade concentrate with 1/2 cup of milk.
  2. Whisk the mixture together until smooth and well incorporated.
  3. In a separate bowl, pour in 2 cups of heavy cream.
  4. Using a hand mixer or stand mixer, beat the heavy cream on medium-high speed until it begins to thicken.
  5. Gradually add 1/4 cup of powdered sugar to the heavy cream while continuing to beat.
  6. Continue beating the heavy cream mixture until it forms stiff peaks, which should take about 2-3 minutes.
  7. Once the whipped cream is ready, gently fold in the pink lemonade and milk mixture.
  8. Add 1 teaspoon of vanilla extract and 1 tablespoon of lemon zest to the bowl and fold them in until evenly distributed.
  9. In a blender, add 1/2 cup of ice and pulse until the ice is finely crushed.
  10. Transfer the crushed ice into the whipped lemonade mixture and gently stir it in.
  11. Once everything is fully combined, serve immediately in glasses, and garnish with extra lemon zest if desired.

Notes

  • For a more intense lemon flavor, add additional lemon zest.
  • This recipe can be easily doubled for a larger gathering.
  • Store any leftovers in the fridge but consume within a day for the best texture.
