- 1 cup pink lemonade concentrate
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup ice
- 1 tablespoon lemon zest
Instructions
- In a large mixing bowl, combine 1 cup of pink lemonade concentrate with 1/2 cup of milk.
- Whisk the mixture together until smooth and well incorporated.
- In a separate bowl, pour in 2 cups of heavy cream.
- Using a hand mixer or stand mixer, beat the heavy cream on medium-high speed until it begins to thicken.
- Gradually add 1/4 cup of powdered sugar to the heavy cream while continuing to beat.
- Continue beating the heavy cream mixture until it forms stiff peaks, which should take about 2-3 minutes.
- Once the whipped cream is ready, gently fold in the pink lemonade and milk mixture.
- Add 1 teaspoon of vanilla extract and 1 tablespoon of lemon zest to the bowl and fold them in until evenly distributed.
- In a blender, add 1/2 cup of ice and pulse until the ice is finely crushed.
- Transfer the crushed ice into the whipped lemonade mixture and gently stir it in.
- Once everything is fully combined, serve immediately in glasses, and garnish with extra lemon zest if desired.
Notes
- For a more intense lemon flavor, add additional lemon zest.
- This recipe can be easily doubled for a larger gathering.
- Store any leftovers in the fridge but consume within a day for the best texture.
