Deliciously soft and chewy white chocolate cranberry cookies, perfect for any occasion!

- 3/4 cup unsalted butter, at room temperature (12 Tbsp or 1.5 sticks)
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 tsp grated orange zest
- 2 tsp vanilla extract
- 1 large egg, room temperature
- 2 cups all-purpose flour (or use your favorite GF flour)
- 1 tsp baking powder
- 1/2 tsp fine sea salt
- 3/4 cup white chocolate chips
- 2 cups fresh cranberries, coarsely chopped (or 1 cup dried cranberries)
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, use an electric mixer to cream together the butter, granulated sugar, and brown sugar for 2–3 minutes until light and fluffy.
- Add the egg and beat well. Mix in the orange zest and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
- Stir in the chopped cranberries and white chocolate chips with a stiff spatula until evenly distributed.
- Shape the dough into 1-inch balls using a small cookie scoop and place them 2 inches apart on the prepared baking sheets.
- Bake for 12–15 minutes, or until the edges are golden brown (if using dried cranberries, bake 11–13 minutes).
- Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- Fresh cranberries create a softer cookie, while dried cranberries result in a slightly chewier texture and shorter bake time.
- Store cookies in an airtight container at room temperature for up to 4 days.
- These cookies freeze well for up to 3 months.
- You can substitute orange zest with lemon zest for a citrusy twist.
