Description

Delicious and creamy White Chocolate Raspberry Cheesecake Balls, perfect for any occasion.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries, mashed
  • 1 cup crushed graham crackers
  • 1/2 cup white chocolate chips, melted
  • 1/4 cup coconut oil or vegetable oil
  • Additional white chocolate for drizzling
  • A pinch of salt
  • Fresh raspberries for garnishing (optional)

Instructions

  1. In a medium bowl, beat the softened cream cheese until smooth using an electric mixer.
  2. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Mix until well combined and creamy.
  3. Fold in the mashed raspberries gently, being careful not to overmix, to maintain a marbled effect.
  4. Add the crushed graham crackers to the mixture and mix until the crumbs are evenly distributed.
  5. Chill the mixture in the refrigerator for about 30 minutes to firm it up slightly.
  6. Once chilled, scoop out tablespoon-sized portions of the cheesecake mixture and roll them into balls using your hands.
  7. Place the balls on a parchment-lined baking sheet and insert a toothpick into each ball for easy dipping.
  8. In a microwave-safe bowl, combine the melted white chocolate and coconut oil. Stir until smooth.
  9. Dip each cheesecake ball into the melted white chocolate, allowing the excess to drip off. Place them back on the baking sheet.
  10. Drizzle additional melted white chocolate over the balls for decoration and garnish with fresh raspberries, if desired.
  11. Place the cheesecake balls back into the refrigerator for at least 1 hour to set before serving.

  • For a smoother texture, make sure the cream cheese is fully softened.
  • Adjust the sweetness by varying the amount of powdered sugar.
  • Using fresh raspberries gives the best flavor, but frozen raspberries can also work if thawed and drained properly.
