- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh raspberries, mashed
- 1 cup crushed graham crackers
- 1/2 cup white chocolate chips, melted
- 1/4 cup coconut oil or vegetable oil
- Additional white chocolate for drizzling
- A pinch of salt
- Fresh raspberries for garnishing (optional)
Instructions
- In a medium bowl, beat the softened cream cheese until smooth using an electric mixer.
- Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Mix until well combined and creamy.
- Fold in the mashed raspberries gently, being careful not to overmix, to maintain a marbled effect.
- Add the crushed graham crackers to the mixture and mix until the crumbs are evenly distributed.
- Chill the mixture in the refrigerator for about 30 minutes to firm it up slightly.
- Once chilled, scoop out tablespoon-sized portions of the cheesecake mixture and roll them into balls using your hands.
- Place the balls on a parchment-lined baking sheet and insert a toothpick into each ball for easy dipping.
- In a microwave-safe bowl, combine the melted white chocolate and coconut oil. Stir until smooth.
- Dip each cheesecake ball into the melted white chocolate, allowing the excess to drip off. Place them back on the baking sheet.
- Drizzle additional melted white chocolate over the balls for decoration and garnish with fresh raspberries, if desired.
- Place the cheesecake balls back into the refrigerator for at least 1 hour to set before serving.
Notes
- For a smoother texture, make sure the cream cheese is fully softened.
- Adjust the sweetness by varying the amount of powdered sugar.
- Using fresh raspberries gives the best flavor, but frozen raspberries can also work if thawed and drained properly.
