- In a large mixing bowl, combine ground turkey, ricotta, breadcrumbs, egg, grapefruit zest, parsley, garlic powder, salt, and pepper. Mix gently until just combined.
- Form mixture into 12-14 evenly sized meatballs.
- Preheat oven to 400°F. Place meatballs on a lined baking sheet and bake for 18-22 minutes until internal temperature reaches 165°F.
- While meatballs cook, prepare orzo by heating olive oil in a saucepan. Add orzo and toast lightly for 2 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer for 8-10 minutes until liquid is absorbed.
- Stir fresh herbs and lemon juice into cooked orzo.
- For glaze, combine grapefruit juice, honey, and Dijon mustard in a small saucepan. Simmer until reduced and slightly thickened.
- Drizzle glaze over meatballs before serving atop herb-infused orzo.
