Ingredients

  • 1 large egg

  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1/4 cup fresh herbs (mix of basil, thyme, oregano)
  • 1 tablespoon lemon juice
  • 1/2 cup fresh grapefruit juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard

Instructions

  1. In a large mixing bowl, combine ground turkey, ricotta, breadcrumbs, egg, grapefruit zest, parsley, garlic powder, salt, and pepper. Mix gently until just combined.
  2. Form mixture into 12-14 evenly sized meatballs.
  3. Preheat oven to 400°F. Place meatballs on a lined baking sheet and bake for 18-22 minutes until internal temperature reaches 165°F.
  4. While meatballs cook, prepare orzo by heating olive oil in a saucepan. Add orzo and toast lightly for 2 minutes.
  5. Pour in chicken broth, bring to a boil, then reduce heat and simmer for 8-10 minutes until liquid is absorbed.
  6. Stir fresh herbs and lemon juice into cooked orzo.
  7. For glaze, combine grapefruit juice, honey, and Dijon mustard in a small saucepan. Simmer until reduced and slightly thickened.
