Description

A refreshing and flavorful pasta salad perfect for summer gatherings and picnics.


Ingredients

Scale
  • 1 lb rotini pasta
  • 3.54 oz pepperoni (quartered)
  • 4 oz sliced salami (quartered)
  • 8 oz fresh mozzarella pearls
  • 1 pint cherry tomatoes (halved)
  • 1 cup black olives (halved)
  • 1 orange bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • ½ cup finely diced red onion
  • 2 tablespoons chopped pepperoncini
  • Homemade Italian dressing

Instructions

  1. Prepare the homemade Italian dressing as directed and refrigerate.
  2. Cook the rotini pasta in salted water until al dente. Drain and transfer to a large mixing bowl.
  3. Pour half of the dressing over the warm pasta and toss gently.
  4. Add all remaining ingredients to the bowl and mix well.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving; up to 24 hours for enhanced flavors.
  6. Toss with remaining dressing before serving and garnish with fresh parsley and Parmesan.

Notes

  • For a spicier kick, consider adding some crushed red pepper flakes.
