Description

A quick and delicious skillet meal featuring sausage and a medley of colorful vegetables, perfect for a weeknight dinner.


Ingredients

  • 4 tablespoons olive oil, divided
  • 1 ½ pounds baby potatoes, halved
  • 14 ounces chicken sausage, sliced into ½-inch rounds
  • 1 medium red onion, diced small
  • 1 small yellow bell pepper, seeded and diced small
  • 1 small orange bell pepper, seeded and diced small
  • 1 cup cherry or grape tomatoes
  • 1 medium zucchini, trimmed and diced into small chunks
  • 2 to 3 cloves garlic, finely minced
  • 1 teaspoon Italian seasoning, or to taste
  • ½ to 1 teaspoon dried oregano, or to taste
  • 1 teaspoon kosher salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste
  • ¼ cup chicken broth
  • Juice of half of 1 lemon
  • Fresh chopped parsley, optional for garnishing

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil and add the halved potatoes. Cook over medium-high heat for 8-10 minutes until fork-tender.
  2. Add the sausage rounds and sauté for 3-4 minutes until they are lightly browned.
  3. Remove the potatoes and sausage from the skillet and place them on a plate.
  4. Add the remaining olive oil and diced onions to the skillet and sauté for 2-3 minutes until translucent.
  5. Add the bell peppers, tomatoes, and zucchini, and sauté for 3-5 minutes until the vegetables are softening.
  6. Add the minced garlic and cook for 1 minute until fragrant.
  7. Return the potatoes and sausage to the skillet, then sprinkle with Italian seasoning, oregano, salt, and pepper. Toss to combine.
  8. Add the chicken broth and lemon juice, deglazing the pan and stirring to combine.
  9. Taste and adjust seasoning as desired, adding more salt, pepper, or other spices as necessary.
  10. Optionally garnish with fresh herbs and serve. Store leftovers airtight in the fridge for up to 5 days or freeze for up to 3 months.

Notes

  • Feel free to substitute different types of sausage or vegetables as per your preference.
  • For extra flavor, consider adding lemon pepper or a pinch of chili flakes.
