A quick and delicious skillet meal featuring sausage and a medley of colorful vegetables, perfect for a weeknight dinner.

- 4 tablespoons olive oil, divided
- 1 ½ pounds baby potatoes, halved
- 14 ounces chicken sausage, sliced into ½-inch rounds
- 1 medium red onion, diced small
- 1 small yellow bell pepper, seeded and diced small
- 1 small orange bell pepper, seeded and diced small
- 1 cup cherry or grape tomatoes
- 1 medium zucchini, trimmed and diced into small chunks
- 2 to 3 cloves garlic, finely minced
- 1 teaspoon Italian seasoning, or to taste
- ½ to 1 teaspoon dried oregano, or to taste
- 1 teaspoon kosher salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- ¼ cup chicken broth
- Juice of half of 1 lemon
- Fresh chopped parsley, optional for garnishing
Instructions
- In a large skillet, heat 2 tablespoons of olive oil and add the halved potatoes. Cook over medium-high heat for 8-10 minutes until fork-tender.
- Add the sausage rounds and sauté for 3-4 minutes until they are lightly browned.
- Remove the potatoes and sausage from the skillet and place them on a plate.
- Add the remaining olive oil and diced onions to the skillet and sauté for 2-3 minutes until translucent.
- Add the bell peppers, tomatoes, and zucchini, and sauté for 3-5 minutes until the vegetables are softening.
- Add the minced garlic and cook for 1 minute until fragrant.
- Return the potatoes and sausage to the skillet, then sprinkle with Italian seasoning, oregano, salt, and pepper. Toss to combine.
- Add the chicken broth and lemon juice, deglazing the pan and stirring to combine.
- Taste and adjust seasoning as desired, adding more salt, pepper, or other spices as necessary.
- Optionally garnish with fresh herbs and serve. Store leftovers airtight in the fridge for up to 5 days or freeze for up to 3 months.
Notes
- Feel free to substitute different types of sausage or vegetables as per your preference.
- For extra flavor, consider adding lemon pepper or a pinch of chili flakes.
