- 4 slices bacon, coarsely chopped
- 1/2 sweet onion, finely diced
- 4 (15-ounce) cans pork and beans
- 1/2 cup Red Gold Ketchup
- 1/4 cup firmly packed dark brown sugar
- 1 (20-ounce) can pineapple tidbits in juice, drained
- 1 tablespoon yellow mustard
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 350°F. In a large oven-safe skillet or dutch oven, cook the bacon over medium-high heat on the cooktop until it just starts to crisp.
- Add the onions and cook until they are translucent – about 5 minutes.
- Reduce the heat to low and add the pork and beans, ketchup, dark brown sugar, drained pineapple, mustard, apple cider vinegar, salt, and pepper and mix well.
- Once combined, place uncovered in the oven and bake for 1 hour.
- Serve warm.
