Description
A delicious and spicy snack featuring chicken and cream cheese stuffed jalapenos wrapped in crispy bacon.

- 1 pound boneless skinless chicken breast pounded thin and cut into 12 strips
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 6 jalapenos cut in half and de-seeded
- 4 ounces cream cheese
- ¼ cup Mexican blend cheese shredded
- 6 slices bacon cut in half
Instructions
- Preheat oven to 400 degrees F. Line a baking sheet with foil and place a wire rack on top of the foil (or grab a broiling pan, no foil needed.) Set aside.
- Place chicken strips in a mixing bowl. Sprinkle the garlic powder, salt, and pepper over chicken and toss to coat.
- Spread cream cheese inside jalapeno halves and sprinkle with shredded cheese to cover the tops.
- Lay a chicken strip over the filled jalapeno popper. Wrap a strip of bacon around the middle of the popper and secure it with a toothpick.
- Place wrapped jalapenos on the wire rack. Bake for 20-30 minutes, or until chicken is cooked through and bacon is crispy.
- Remove from the oven and serve warm or at room temperature as is or with your favorite dipping sauce.
Notes
- Feel free to adjust the amount of cheese based on your preference.
- Make sure to remove all seeds from jalapenos for a less spicy version.
