Description

A delicious and spicy snack featuring chicken and cream cheese stuffed jalapenos wrapped in crispy bacon.


Ingredients

  • 1 pound boneless skinless chicken breast pounded thin and cut into 12 strips
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 6 jalapenos cut in half and de-seeded
  • 4 ounces cream cheese
  • ¼ cup Mexican blend cheese shredded
  • 6 slices bacon cut in half

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with foil and place a wire rack on top of the foil (or grab a broiling pan, no foil needed.) Set aside.
  2. Place chicken strips in a mixing bowl. Sprinkle the garlic powder, salt, and pepper over chicken and toss to coat.
  3. Spread cream cheese inside jalapeno halves and sprinkle with shredded cheese to cover the tops.
  4. Lay a chicken strip over the filled jalapeno popper. Wrap a strip of bacon around the middle of the popper and secure it with a toothpick.
  5. Place wrapped jalapenos on the wire rack. Bake for 20-30 minutes, or until chicken is cooked through and bacon is crispy.
  6. Remove from the oven and serve warm or at room temperature as is or with your favorite dipping sauce.

Notes

  • Feel free to adjust the amount of cheese based on your preference.
  • Make sure to remove all seeds from jalapenos for a less spicy version.
