Description

Baked Ricotta Chicken is a flavorful and easy dinner recipe featuring juicy chicken breasts topped with a creamy ricotta mixture and baked to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, chopped spinach, minced garlic, fresh thyme, fresh basil, salt, and black pepper. Mix until well combined.
  3. Place the chicken breasts in a baking dish and drizzle with olive oil. Season both sides with salt and pepper.
  4. Using a spoon, generously spread the ricotta mixture over the top of each chicken breast.
  5. Pour the marinara sauce around the chicken in the baking dish.
  6. Cover the dish with aluminum foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  8. Let the chicken rest for a few minutes before serving, spooning some of the marinara sauce over the top.

  • For extra flavor, marinate the chicken in the olive oil, salt, and pepper before preparing.
