Description

A creamy and comforting potato soup that’s easy to make and perfect for any occasion.


Ingredients

  • 4 cups potatoes peeled and diced
  • 2 tablespoons butter
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots diced
  • 1/2 cup celery chopped
  • 1/4 cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup milk or heavy cream
  • 1 1/2 cups cheddar cheese shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions sliced
  • 2 tablespoons fresh parsley chopped
  • 1/2 cup cooked bacon crumbled (optional)

Instructions

  1. Peel and dice the potatoes, then chop all vegetables and mince the garlic.
  2. In a large pot, melt butter over medium heat and sauté onion, carrots, and celery until softened.
  3. Add garlic and cook for about 1 minute until fragrant.
  4. Sprinkle flour over the vegetables and stir continuously for 1–2 minutes.
  5. Slowly pour in the broth while stirring to avoid lumps, then bring to a simmer.
  6. Add potatoes and cook for 15–20 minutes until tender.
  7. Lightly mash some of the potatoes to create a creamy texture.
  8. Stir in milk or cream and gradually add shredded cheese until melted.
  9. Season with salt and pepper, adjusting to taste.
  10. Simmer for a few more minutes, then serve hot with desired garnishes.
