- 4 cups potatoes peeled and diced
- 2 tablespoons butter
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 cup carrots diced
- 1/2 cup celery chopped
- 1/4 cup all-purpose flour
- 4 cups chicken or vegetable broth
- 1 cup milk or heavy cream
- 1 1/2 cups cheddar cheese shredded
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup green onions sliced
- 2 tablespoons fresh parsley chopped
- 1/2 cup cooked bacon crumbled (optional)
Instructions
- Peel and dice the potatoes, then chop all vegetables and mince the garlic.
- In a large pot, melt butter over medium heat and sauté onion, carrots, and celery until softened.
- Add garlic and cook for about 1 minute until fragrant.
- Sprinkle flour over the vegetables and stir continuously for 1–2 minutes.
- Slowly pour in the broth while stirring to avoid lumps, then bring to a simmer.
- Add potatoes and cook for 15–20 minutes until tender.
- Lightly mash some of the potatoes to create a creamy texture.
- Stir in milk or cream and gradually add shredded cheese until melted.
- Season with salt and pepper, adjusting to taste.
- Simmer for a few more minutes, then serve hot with desired garnishes.
Notes
- Add cooked bacon as a topping for extra flavor.
- For a vegan version, substitute cheese and cream with plant-based alternatives.
