- 1/2 cup frozen blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon freshly squeezed lemon juice
- 2½ teaspoons cornstarch
- White Chocolate Fudge
- 3 cups good quality white baking chips
- 1 cup sweetened condensed milk
Instructions
- Line an 8×8 baking dish with parchment paper, ensuring an overhang on 2 sides.
- Add frozen blueberries, sugar, lemon juice, and cornstarch to a saucepan over medium heat. Simmer and whisk frequently for about 10 minutes until thickened.
- Pour the blueberry mixture into a fine-mesh strainer over a bowl. Mash the mixture, discarding the hulls, and chill the topping in the refrigerator for 1 hour.
- In a large microwave-safe bowl, combine white baking chips and condensed milk. Microwave for 1 minute, stirring, and then in 30-second intervals until melted and smooth.
- Add the chilled blueberry topping to the melted fudge and fold gently to create a marbled effect.
- Pour the fudge into the lined baking dish, smooth the top, and chill in the refrigerator for at least 3-4 hours.
- Lift the fudge out using the parchment overhang and slice into 36 pieces. Keep refrigerated until serving.
Notes
- Ensure not to overmix the blueberry topping with the fudge for the best marbled effect.
- Store any leftover fudge in the refrigerator for freshness.
