Description

A delicious and hearty breakfast dish combining sausage, hash browns, scrambled eggs, and cheese.


Ingredients

Scale
  • 1 pound ground breakfast sausage
  • 4 tablespoons butter
  • 15 oz frozen shredded hash browns
  • kosher salt, to taste
  • pepper, to taste
  • 6 eggs
  • 1/4 cup milk
  • 2 cups shredded cheese (Mexican blend recommended)
  • Optional: chives, hot sauce of choice, sour cream, salsa

Instructions

  1. Set a large skillet over medium heat and once hot, add the breakfast sausage. Cook for 4 to 5 minutes, stirring and breaking apart with a spatula. Once cooked, remove and place on a plate lined with paper towels.
  2. Add 3 tablespoons of the butter to the same skillet over medium heat and add the hash browns, kosher salt, and pepper. Cook for 9 to 11 minutes, stirring a few times and pressing the hash browns into the skillet.
  3. While the hash browns cook, crack the eggs into a bowl and add the milk, kosher salt, and pepper. Beat with a fork until combined.
  4. Remove the hash browns from the skillet. Place the same skillet over medium low heat and add the remaining one tablespoon of butter and the scrambled egg mixture. Cook for 3 to 4 minutes or until the eggs are scrambled and cooked to your preference.
  5. Once the eggs are cooked, add the cooked hash browns and cooked sausage into the skillet along with the shredded cheese. Stir until evenly combined.
  6. Serve the breakfast hot mess express with toppings such as chives, hot sauce, sour cream, and salsa.

  • You can save some of the shredded cheese to sprinkle over top if desired.
