Description
A delicious and hearty breakfast dish combining sausage, hash browns, scrambled eggs, and cheese.
Ingredients
Scale
- 1 pound ground breakfast sausage
- 4 tablespoons butter
- 15 oz frozen shredded hash browns
- kosher salt, to taste
- pepper, to taste
- 6 eggs
- 1/4 cup milk
- 2 cups shredded cheese (Mexican blend recommended)
- Optional: chives, hot sauce of choice, sour cream, salsa
Instructions
- Set a large skillet over medium heat and once hot, add the breakfast sausage. Cook for 4 to 5 minutes, stirring and breaking apart with a spatula. Once cooked, remove and place on a plate lined with paper towels.
- Add 3 tablespoons of the butter to the same skillet over medium heat and add the hash browns, kosher salt, and pepper. Cook for 9 to 11 minutes, stirring a few times and pressing the hash browns into the skillet.
- While the hash browns cook, crack the eggs into a bowl and add the milk, kosher salt, and pepper. Beat with a fork until combined.
- Remove the hash browns from the skillet. Place the same skillet over medium low heat and add the remaining one tablespoon of butter and the scrambled egg mixture. Cook for 3 to 4 minutes or until the eggs are scrambled and cooked to your preference.
- Once the eggs are cooked, add the cooked hash browns and cooked sausage into the skillet along with the shredded cheese. Stir until evenly combined.
- Serve the breakfast hot mess express with toppings such as chives, hot sauce, sour cream, and salsa.
Notes
- You can save some of the shredded cheese to sprinkle over top if desired.
