Ingredients

- 4 cups finely diced Broccoli florets (~1 large bunch)
- 1/4 cup Water
- 1 cup shredded Cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup Blanched Almond Flour
- 2 large Eggs
- 2 cloves minced Garlic
- 1/2 teaspoon Sea Salt
- 1/4 teaspoon Black Pepper
- 2 tablespoons Olive Oil
Instructions
- Steam the Broccoli: Place your finely diced broccoli and water into a large bowl. Cover it tightly with plastic wrap and microwave for 3-4 minutes until the broccoli is super soft. If you prefer, you can also steam it on the stovetop. Carefully drain any water that’s left.
- Mash Gently: Use a large fork or a potato masher to partially mash the softened broccoli. You want it broken down but still with some texture.
- Mix Your Fritter Batter: Add the shredded cheddar cheese, grated Parmesan cheese, almond flour, eggs, minced garlic, sea salt, and black pepper to the mashed broccoli. Stir everything together until it’s well combined and forms a nice batter.
- Pan-Fry to Perfection: Heat the olive oil in a large skillet over medium heat. Scoop about 1/4 cup of the mixture for each fritter onto the hot pan. Gently flatten each fritter with a spatula to about 1/4 to 1/3 inch thick.
- Achieve Golden Crispiness: Cook the fritters for 2-3 minutes on each side until they turn beautifully golden brown and are cooked all the way through.
- Serve & Enjoy: Transfer the cooked fritters to a plate lined with paper towels to soak up any extra oil. Continue with the remaining mixture until all your healthy and delicious broccoli fritters are ready to be savored!
Notes
- For extra crunch, consider adding breadcrumbs to the batter.
- These fritters can be frozen before or after cooking for later enjoyment.
