- 1 cup (226 g) unsalted butter
- 1 cup (200 g) granulated sugar
- ¼ cup (60 ml) light corn syrup
- ¼ cup (60 ml) water
- 1 ½ cups (180 g) chopped pecans (reserve a handful for topping)
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Prepare your pan: Line a baking sheet with parchment paper or a silicone mat. Scatter half of the chopped pecans over the surface.
- Cook the toffee: Add butter, sugar, water, and corn syrup to a heavy saucepan. Cook over medium heat, stirring until melted and bubbling. Attach a candy thermometer and cook without stirring until it reaches 290–300°F (143–149°C). The mixture should be golden, shiny, and thick.
- Add flavor + pecans: Remove from heat immediately. Stir in vanilla, salt, and remaining pecans.
- Pour and spread: Pour hot toffee over the pecans on your prepared sheet. Spread gently into a thin, even layer. Sprinkle extra pecans on top if desired.
- Cool and break: Allow the toffee to cool fully at room temperature. Break into delicious candy pieces.

- Ensure the candy thermometer is properly calibrated for accurate temperature readings.
- Store the toffee in an airtight container to maintain its crispness.
- Optionally, you can drizzle melted chocolate over the top for added flavor.
