This Cajun Chicken Loaded Potato Bake is a delicious and hearty dish packed with flavor from seasoned chicken, roasted potatoes, and topped with cheese, bacon, and sour cream.

  • 2 large boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 4 medium russet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream

Instructions

  1. Prepare oven and pan: Preheat oven to 425°F (220°C). Lightly grease a 9×13-inch baking dish with oil or nonstick spray.
  2. Season and roast potatoes: In a large mixing bowl, toss potato cubes with olive oil, salt, black pepper, and smoked paprika. Spread evenly in the greased baking dish.
  3. Roast potatoes: Place potatoes in the oven and roast for 20 minutes, stirring once halfway through for even browning.
  4. Season chicken: While potatoes roast, combine chicken cubes with olive oil and Cajun seasoning in a bowl, mixing until all pieces are evenly coated.
  5. Combine chicken and potatoes: Remove baking dish from oven after 20 minutes. Scatter seasoned chicken evenly over the partially cooked potatoes.
  6. Bake until tender: Return dish to the oven and bake for an additional 20 minutes, or until chicken is cooked through and potatoes are golden and tender.
  7. Top with cheese and bacon: Sprinkle shredded cheddar cheese and crumbled bacon over the baked casserole. Return to oven for 3 to 5 minutes until cheese is fully melted.
  8. Add green onions and sour cream: Remove from oven. Immediately top with chopped green onions and dollops of sour cream. Serve hot.
