Description
Delicious and fresh Caprese skewers made with cheese tortellini, mozzarella, and grape tomatoes for a perfect appetizer.
Ingredients

- 18 cheese tortellini
- 18 small bite-sized mozzarella balls
- 18 grape tomatoes
- 18 fresh basil leaves
- ¼ cup olive oil
- 1 tablespoon fresh lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Drizzle of balsamic glaze as desired
Instructions
- Cook the cheese tortellini according to the package directions. Once cooked, drain the tortellini in a colander and rinse them with cold water to cool them down.
- In a medium-sized bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Add the cooled tortellini, grape tomatoes, and mozzarella balls to the bowl with the dressing. Toss everything together to coat them evenly. Allow the mixture to marinate for about 15 minutes.
- Take a skewer and thread one grape tomato, one fresh basil leaf, one tortellini, and one mozzarella ball onto it. Repeat this process until all the ingredients are used.
- Place the completed skewers on a platter and drizzle them with balsamic glaze according to your preference.
- The Caprese skewers can be served immediately, or you can cover them with foil and refrigerate until you’re ready to serve.

- Variation: Add other vegetables or types of cheese if desired.
- Skewers can be made ahead of time and refrigerated for convenience.
