A comforting and delicious cheesy beef and rice casserole that the whole family will enjoy.

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 cup uncooked white rice (long-grain works best)
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch (23×33 cm) baking dish and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for 2–3 minutes, until the onion is softened and translucent.
- Add the ground beef to the skillet. Cook, breaking it apart with a spatula, for 5–7 minutes, or until browned and no longer pink. Drain excess fat if needed.
- Stir in the beef broth, cream of mushroom soup, uncooked white rice, Worcestershire sauce, and frozen mixed vegetables. Season with salt and pepper to taste, then mix until everything is evenly combined.
- Bring the mixture just to a simmer, then carefully pour or spoon it into the prepared baking dish, spreading it into an even layer.
- Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and return the dish to the oven. Bake uncovered for an additional 10–15 minutes, or until the cheese is fully melted, bubbly, and lightly golden.
- Remove from the oven and let the casserole cool for 5–10 minutes to set before serving. Garnish with chopped fresh parsley, if desired.
Notes
- Make sure to drain excess fat from the cooked ground beef if necessary.
- Feel free to customize the mixed vegetables based on your preference.
