Description

A deliciously cheesy and crispy breakfast dish featuring golden potatoes and smoky bacon.


Ingredients

Scale
  • 4 potatoes, peeled, diced into small pieces
  • ½ cup green bell pepper, diced small
  • ½ cup onions, chopped
  • 3 cloves garlic, minced
  • 23 tablespoon vegetable oil, might need more
  • 1 teaspoon salt, more or less to taste
  • 1 teaspoon black pepper
  • 12 cups sharp cheddar cheese, shredded
  • 810 pieces Applewood bacon, crumbled into small pieces
  • Optional: sour cream for topping

Instructions

  1. In a large skillet or frying pan, heat oil over medium heat.
  2. Add potatoes. Cook until potatoes just start to brown.
  3. Stir in onions, bell pepper, and garlic.
  4. Add salt and pepper.
  5. Cook until onions are translucent and potatoes are brown and crispy.
  6. In the meantime while the potatoes are cooking, cook bacon to desired crispiness.
  7. When cooked, place bacon on a plate lined with paper towels. Once cooled, crumble bacon. Set aside.
  8. When potatoes are finished cooking, turn off heat and sprinkle shredded cheese over the top of the potatoes while they are still in the pan.
  9. Add bacon crumbles.
  10. Spoon onto plate and add sour cream and green onions, if desired.

Notes

  • Feel free to adjust the amount of cheese based on preference.
  • For more flavor, add spices like paprika or cayenne.
  • Can be served as a side dish or a hearty breakfast.
