  • 4 medium red or Yukon gold potatoes, diced into 1-inch pieces
  • 1 pound smoked sausage, sliced into ½-inch rounds (kielbasa or andouille recommended)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons ranch seasoning mix
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dice 4 medium potatoes into roughly 1-inch cubes. Toss them in a large mixing bowl with 2 tablespoons olive oil, 2 tablespoons ranch seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder, and a pinch of salt and pepper until well coated.
  3. Heat an oven-safe skillet over medium heat. Add the sliced sausage and cook for 4-5 minutes, stirring occasionally until edges brown and sausage renders fat.
  4. Add the seasoned potatoes to the skillet with the sausage, spreading them out in a single layer. Cook on the stovetop for 5 minutes, stirring occasionally.
  5. Transfer the skillet to the preheated oven and roast for 20-25 minutes, stirring halfway through, until potatoes are fork-tender and golden brown.
  6. Sprinkle shredded cheddar cheese evenly on top and return to the oven for 3-5 minutes until cheese melts and bubbles.
  7. Remove from oven, garnish with chopped parsley, and serve immediately.
