- 1 pound cooked chicken, shredded
- 1 (32-ounce) bag frozen tater tots
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Stir in the frozen mixed vegetables and half of the shredded cheddar cheese.
- Spread the chicken mixture evenly in a greased 9×13-inch baking dish.
- Layer the frozen tater tots on top of the chicken mixture, arranging them in a single layer.
- Sprinkle the remaining cheddar cheese over the tater tots.
- Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- This casserole can be made ahead of time and refrigerated before baking.
- Feel free to customize the mixed vegetables according to your preference.
- For an extra crispy topping, broil for the last few minutes of baking.
