- 4 bone-in chicken thighs, skin-on
- ¼ cup (54 g) extra virgin olive oil
- 1 large lemon, juiced (about ¼ cup juice)
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 recipe chimichurri sauce
Instructions
- To a large bowl, add oil, lemon juice, salt, pepper, paprika, oregano, garlic powder, and onion powder. Mix well.
- Add chicken, tossing to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, up to 4 hours to allow the flavors to meld.
- After marinating, place the coated chicken skin-side up into the basket of your air fryer. Depending on the size of your air fryer, you may have to work in batches.
- Air fry at 390°F for 22-24 minutes, flipping halfway through cooking, or until they reach an internal temperature of 165°F and are golden brown and crispy on the outside.
- Serve warm with chimichurri sauce.

- For best results, marinate the chicken for the full 4 hours.
- Adjust the seasoning according to taste preferences.
- Serve with extra chimichurri sauce for dipping.
