- 4 cups Napa cabbage shredded
- 4 cups iceberg lettuce chopped
- 1 cup carrots shredded
- 2 cups grilled chicken breast sliced or cubed
- 11 ounces mandarin oranges drained
- 4 green onions sliced
- 1/2 cup slivered almonds
- 2 tablespoons toasted sesame seeds
- 1 cup chow mein noodles
Instructions
- In a bowl, whisk together rice vinegar, hoisin sauce, soy sauce, honey, ginger paste, garlic, olive oil, and sesame oil to prepare the dressing.
- In a large salad bowl, combine shredded Napa cabbage, chopped iceberg lettuce, shredded carrots, and sliced grilled chicken.
- Add drained mandarin oranges, sliced green onions, slivered almonds, and toasted sesame seeds to the salad mix.
- Pour the dressing over the salad and toss gently to combine.
- Top the salad with chow mein noodles just before serving for added crunch.
Notes
- For a spicier kick, add some red pepper flakes to the dressing.
- You can substitute grilled chicken with rotisserie chicken for convenience.
- Leftover salad can be stored in the refrigerator, but it’s best consumed fresh.
