Description

A refreshing and flavorful Chinese Chicken Salad featuring grilled chicken, crunchy vegetables, and a tangy dressing.


Ingredients

  • 3 Tablespoons rice vinegar
  • 2 Tablespoons hoisin sauce
  • 2 Tablespoons soy sauce
  • 1 Tablespoon honey
  • 1 Tablespoon ginger paste
  • 2 cloves garlic minced
  • 1/4 cup olive oil
  • 1 tablespoon sesame oil
  • 4 cups Napa cabbage shredded
  • 4 cups iceberg lettuce chopped
  • 1 cup carrots shredded
  • 2 cups grilled chicken breast sliced or cubed
  • 11 ounces mandarin oranges drained
  • 4 green onions sliced
  • 1/2 cup slivered almonds
  • 2 tablespoons toasted sesame seeds
  • 1 cup chow mein noodles

Instructions

  1. In a bowl, whisk together rice vinegar, hoisin sauce, soy sauce, honey, ginger paste, garlic, olive oil, and sesame oil to prepare the dressing.
  2. In a large salad bowl, combine shredded Napa cabbage, chopped iceberg lettuce, shredded carrots, and sliced grilled chicken.
  3. Add drained mandarin oranges, sliced green onions, slivered almonds, and toasted sesame seeds to the salad mix.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Top the salad with chow mein noodles just before serving for added crunch.

Notes

  • For a spicier kick, add some red pepper flakes to the dressing.
  • You can substitute grilled chicken with rotisserie chicken for convenience.
  • Leftover salad can be stored in the refrigerator, but it’s best consumed fresh.
