Description

A festive and colorful dessert perfect for Christmas celebrations, these Jello Balls are made with delicious gelatin flavors and coated in sweetened coconut.


Ingredients

  • 1 box (85 g) lime-flavored gelatin powder
  • 1 box (85 g) strawberry-flavored gelatin powder
  • 975 g sweetened desiccated coconut, divided
  • 375 g plain Greek yogurt, divided

Instructions

  1. Line a baking sheet or another portable flat surface with parchment paper; set aside.
  2. In one medium mixing bowl, combine lime gelatin powder. In a second bowl, combine strawberry gelatin powder.
  3. Add 187 g (¾ cup) plain Greek yogurt to each bowl containing gelatin powder.
  4. Add 250 g (2½ cups) desiccated coconut into each gelatin and yogurt mixture.
  5. Mix each bowl separately using a different utensil for each color until all ingredients are fully combined and the mixture is uniform.
  6. Place 75 g (¾ cup) desiccated coconut into two small separate bowls for coating.
  7. Using gloves, roll the strawberry mixture into 1-tablespoon-sized balls. Immediately roll each in one bowl of coconut to coat completely. Arrange onto prepared baking sheet.
  8. Using the reserved lime mixture, repeat the process, rolling balls and coating in the second bowl of coconut to avoid color transfer.
  9. Place the completed Jello balls uncovered in the refrigerator for at least 4 hours or until firm to the touch.

Notes

  • Make sure to use different utensils for each color to prevent color transfer.
  • Keep the Jello balls covered in the refrigerator for freshness.
  • Use gloves for easier handling and less mess during rolling.
