Description

Churro Cheesecake is a delightful dessert that combines the flavors of traditional churros with a creamy cheesecake filling, topped with cinnamon sugar.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar for topping
  • 1/4 cup unsalted butter, melted (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, 1/4 cup sugar, and salt. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Add 1 cup sugar, vanilla extract, and eggs. Mix until fully combined and creamy.
  4. Pour the cream cheese mixture over the crust in the baking dish, spreading it evenly.
  5. In a small bowl, mix together 1/4 cup sugar and ground cinnamon. Sprinkle this mixture evenly over the cheesecake layer.
  6. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  7. Remove from the oven and let cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set.
  8. Once chilled, drizzle the melted butter over the top and sprinkle with additional cinnamon sugar if desired. Cut into bars and serve.

  • For a richer cheesecake, use full-fat cream cheese.
