Description

Delicious Churro Sourdough Popovers coated with cinnamon sugar, perfect for a sweet treat.


Ingredients

Scale
  • 3 eggs, at room temperature
  • 1 cup milk of choice, at room temperature
  • 1/2 cup sourdough discard or unfed starter (active starter will also work)
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 4 tbsp melted butter, for brushing, if needed
  • ½ cup granulated sugar
  • 2 tbsp cinnamon

Instructions

  1. Preheat the oven and muffin tin: Spray a muffin pan with nonstick cooking spray, and place it on the middle rack in the oven. Preheat the oven to 400F while you make the popover batter.
  2. Make the sourdough popover batter: In a large bowl, whisk together the eggs. Add the milk, sourdough discard, and salt. Whisk until just combined. Whisk in the flour until the large lumps are gone, being careful not to over-mix. Transfer the batter to a large measuring cup or glass.
  3. Divide the batter in the muffin tin and bake: Working quickly, divide the batter evenly among the muffin wells, filling almost to the top. Bake at 400F for 30 minutes, or until puffed and golden brown.
  4. Coat in the cinnamon sugar mixture and serve: While the popovers are baking, make the cinnamon sugar coating mixture by mixing together the sugar and cinnamon in a medium bowl. Remove from the oven, let cool in the pan for a minute, then remove from the pan and immediately roll in the cinnamon sugar mixture to coat. If the coating isn’t sticking well, brush the outsides of the popovers with a little bit of melted butter, and then roll in the cinnamon sugar mixture to coat.
  5. Serve warm with butter and a sprinkle of flaky sea salt, if desired. Enjoy!

Notes

  • For a stronger cinnamon flavor, increase the amount of cinnamon in the sugar mixture.
  • These popovers are best enjoyed warm.
  • Store any leftovers in an airtight container at room temperature for up to two days.
