Description
Classic Polish Pierogi filled with a delicious mixture of potato and cheese, served with caramelized onions.
Ingredients

- 3 cups flour
- 1 egg
- 1 cup sour cream
- 1/2 cup warm water
- 1/2 tsp salt
- 3 cups mashed potatoes
- 1 cup farmer cheese
- 1 onion (caramelized)
- Salt and pepper to taste
- 4 tbsp butter for serving
- Extra caramelized onions for serving
Instructions
- Prepare the dough by mixing flour, egg, sour cream, warm water, and salt until a soft dough forms. Knead for five minutes and let it rest for 30 minutes.
- Make the filling by combining mashed potatoes, farmer cheese, half of the caramelized onion, and season with salt and pepper. Mix well.
- Roll out the dough on a floured surface to about 1/8 inch thick and cut into 3-inch circles.
- Fill each circle with about 1 tablespoon of filling, fold, and pinch the edges to seal tightly.
- Boil the pierogi in salted water for 3 to 4 minutes or until they float.
- Pan-fry in melted butter over medium heat for 2 to 3 minutes until golden brown.
- Serve hot, topped with caramelized onions and a dollop of sour cream.
Notes
- Adjust the filling to taste with more or less seasoning as desired.
- These pierogi can also be frozen before boiling for a later meal.
