Description

A fluffy breakfast delight featuring cloud-like egg whites topped with rich blue cheese and crispy bacon.


Ingredients

Scale
  • 2 large eggs
  • 2 tablespoons blue cheese, crumbled
  • 2 slices bacon, cooked until crisp and crumbled
  • 1/8 teaspoon freshly ground black pepper
  • Pinch sea salt
  • 1 tablespoon chives, finely chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 200°C and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks, keeping the yolks whole in separate bowls.
  3. Whisk the egg whites with a pinch of salt until stiff peaks form.
  4. Gently fold in the crumbled blue cheese and most of the crumbled bacon, saving some for topping.
  5. Spoon the egg white mixture onto the baking sheet in two mounds, creating a well in the center of each.
  6. Bake the egg whites for 3 minutes until lightly set.
  7. Carefully slide one yolk into the well of each baked egg white cloud.
  8. Return to the oven and bake for an additional 3-4 minutes, until the yolks are just set but remain runny.
  9. Remove from the oven, top with reserved bacon, freshly ground black pepper, and chives. Serve immediately.
