A fluffy breakfast delight featuring cloud-like egg whites topped with rich blue cheese and crispy bacon.

- 2 large eggs
- 2 tablespoons blue cheese, crumbled
- 2 slices bacon, cooked until crisp and crumbled
- 1/8 teaspoon freshly ground black pepper
- Pinch sea salt
- 1 tablespoon chives, finely chopped (optional, for garnish)
Instructions
- Preheat the oven to 200°C and line a baking sheet with parchment paper.
- Separate the egg whites from the yolks, keeping the yolks whole in separate bowls.
- Whisk the egg whites with a pinch of salt until stiff peaks form.
- Gently fold in the crumbled blue cheese and most of the crumbled bacon, saving some for topping.
- Spoon the egg white mixture onto the baking sheet in two mounds, creating a well in the center of each.
- Bake the egg whites for 3 minutes until lightly set.
- Carefully slide one yolk into the well of each baked egg white cloud.
- Return to the oven and bake for an additional 3-4 minutes, until the yolks are just set but remain runny.
- Remove from the oven, top with reserved bacon, freshly ground black pepper, and chives. Serve immediately.
