Deliciously fun Cookie Monster Cookies that are perfect for any occasion!
Ingredients

- 1 (17.5 ounce) bag of sugar cookie mix
- 1/2 cup salted butter softened
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- blue food coloring
- 1/2 cup mini Oreos cut in half
- 1/2 cup mini Chips Ahoy! cut in half
- 1/2 cup white chocolate chips
- 1/2 cup semi-sweet chocolate chips
- 32 large candy eyeballs
Instructions
- Preheat oven to temperature specified on sugar cookie mix package. Line two cookie sheets with parchment paper.
- In a mixing bowl, combine sugar cookie mix, softened butter, egg, and vanilla extract. Mix until dough forms.
- Add a few drops of blue food coloring to dough and mix until evenly colored.
- Gently fold in mini Oreos, mini Chips Ahoy!, white chocolate chips, and semi-sweet chocolate chips until evenly distributed.
- Using a large scoop (approximately 3 tablespoons), scoop dough and roll into balls. Place on prepared cookie sheets.
- Bake in preheated oven for 13-16 minutes or until edges are lightly golden brown.
- Remove from oven and immediately press candy eyeballs into front of each cookie while still warm.
- Allow cookies to cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.
Notes
- Make sure to let the cookies cool before handling to maintain their shape.
- Adjust the number of candy eyeballs based on personal preference.
- Store leftovers in an airtight container for up to a week.
