Instructions

  1. Heat olive oil in a large pot over medium heat and sauté onion, garlic, carrots, and celery until softened.
  2. Add mixed vegetables, protein, and broth, then bring to a gentle boil.
  3. Reduce heat and let simmer for 20–25 minutes until vegetables are tender.
  4. Stir in milk or cream and add flour or cornstarch slurry to thicken.
  5. For casserole variation, mix ingredients with cooked rice or pasta and transfer to a baking dish.
  6. Top with shredded cheese and bake at 375°F (190°C) for 25–30 minutes until golden and bubbly.
