Ingredients

  • 2 ripe avocados
  • 1/2 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 1 small garlic clove
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a food processor or blender.
  2. Add crumbled feta and Greek yogurt to the processor.
  3. Add garlic, lemon juice, salt, and pepper.
  4. Drizzle in olive oil and blend until smooth and creamy.
  5. Scrape down the sides as needed to ensure even texture.
  6. Transfer to a bowl and top with fresh parsley and extra feta if desired.
  7. Serve immediately or chill for 30 minutes if preferred cold.
