Instructions
- Gather and prepare all ingredients by dicing the vegetables, slicing the mushrooms, mincing the garlic, and shredding the cooked chicken.
- Heat butter and olive oil in a large skillet or Dutch oven over medium heat.
- Add onions and carrots and cook for 4 to 5 minutes until softened.
- Stir in the mushrooms and cook until lightly browned, about 4 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over the vegetables and stir continuously for 1 minute.
- Slowly whisk in the chicken broth until smooth.
- Pour in the milk and heavy cream, stirring constantly.
- Add salt, pepper, thyme, parsley, and paprika.
- Simmer the sauce gently for 4 to 6 minutes until slightly thickened.
- Cook the gnocchi separately according to package instructions until they float.
- Drain the gnocchi and set aside.
- Add shredded chicken and peas to the creamy sauce.
- Fold in the cooked gnocchi carefully.
- Reduce heat and stir in mozzarella and parmesan cheese until melted.
- Simmer gently for 2 to 3 more minutes.
- Garnish with fresh thyme or parsley and serve warm.
