  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas
  • 3 cups cooked shredded chicken
  • 1 pound potato gnocchi
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon paprika
  • Fresh thyme or parsley for garnish

Instructions

  1. Gather and prepare all ingredients by dicing the vegetables, slicing the mushrooms, mincing the garlic, and shredding the cooked chicken.
  2. Heat butter and olive oil in a large skillet or Dutch oven over medium heat.
  3. Add onions and carrots and cook for 4 to 5 minutes until softened.
  4. Stir in the mushrooms and cook until lightly browned, about 4 minutes.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Sprinkle flour over the vegetables and stir continuously for 1 minute.
  7. Slowly whisk in the chicken broth until smooth.
  8. Pour in the milk and heavy cream, stirring constantly.
  9. Add salt, pepper, thyme, parsley, and paprika.
  10. Simmer the sauce gently for 4 to 6 minutes until slightly thickened.
  11. Cook the gnocchi separately according to package instructions until they float.
  12. Drain the gnocchi and set aside.
  13. Add shredded chicken and peas to the creamy sauce.
  14. Fold in the cooked gnocchi carefully.
  15. Reduce heat and stir in mozzarella and parmesan cheese until melted.
  16. Simmer gently for 2 to 3 more minutes.
  17. Garnish with fresh thyme or parsley and serve warm.
