Description

Irresistible creamy coconut custard tarts topped with fresh berries.


Ingredients

Scale
  • 1 cup coconut milk
  • 1 cup heavy cream
  • 0.5 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 cup cornstarch
  • 1 pre-made tart shell (store-bought or homemade)
  • 1 cup mixed fresh berries
  • to taste extra shredded coconut for garnish
  • to taste mint leaves for garnish

Instructions

  1. In a medium saucepan, combine the coconut milk, heavy cream, and granulated sugar. Heat over medium, stirring occasionally, until the mixture is warm and the sugar has dissolved.
  2. In a separate bowl, whisk together the eggs, vanilla extract, and cornstarch until smooth.
  3. Gradually pour the warm cream mixture into the egg mixture, whisking constantly to temper the eggs and prevent them from scrambling.
  4. Return the mixture to the saucepan and cook over medium heat, stirring continuously until it thickens and coats the back of a spoon, about 5-7 minutes.
  5. Once thickened, remove from heat and let the custard cool slightly.
  6. Pour the custard into the pre-made tart shell, spreading it evenly.
  7. Refrigerate the tart for at least 2 hours, or until set.
  8. Before serving, top the custard with fresh mixed berries and a sprinkle of shredded coconut.
  9. Garnish with mint leaves for a pop of color and freshness.
