- 1 cup coconut milk
- 1 cup heavy cream
- 0.5 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 0.25 cup cornstarch
- 1 pre-made tart shell (store-bought or homemade)
- 1 cup mixed fresh berries

Instructions
- In a medium saucepan, combine the coconut milk, heavy cream, and granulated sugar. Heat over medium, stirring occasionally, until the mixture is warm and the sugar has dissolved.
- In a separate bowl, whisk together the eggs, vanilla extract, and cornstarch until smooth.
- Gradually pour the warm cream mixture into the egg mixture, whisking constantly to temper the eggs and prevent them from scrambling.
- Return the mixture to the saucepan and cook over medium heat, stirring continuously until it thickens and coats the back of a spoon, about 5-7 minutes.
- Once thickened, remove from heat and let the custard cool slightly.
- Pour the custard into the pre-made tart shell, spreading it evenly.
- Refrigerate the tart for at least 2 hours, or until set.
- Before serving, top the custard with fresh mixed berries and a sprinkle of shredded coconut.
- Garnish with mint leaves for a pop of color and freshness.
