Description

A delightful holiday treat combining fresh cranberries and creamy textures, perfect for festive gatherings.

Ingredients

Scale
  • 2 cups (200 g) fresh cranberries, finely chopped
  • ¾ cup (150 g) granulated sugar
  • 8 oz (225 g) cream cheese, softened
  • 2 cups (480 ml) heavy whipping cream, cold
  • ½ cup (60 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (20 oz / 565 g) crushed pineapple, thoroughly drained
  • 1 cup mini marshmallows
  • ½ cup chopped walnuts
  • ½ cup dried cranberries
  • ¼ cup chopped walnuts, for topping
  • ¼ cup dried cranberries, for topping

Instructions

  1. Finely chop the fresh cranberries. Mix with granulated sugar and refrigerate for 1 hour to reduce their tartness. Drain off excess liquid.
  2. Use a 9 × 13-inch rectangular white ceramic casserole dish with a solid, opaque white front and sides.
  3. Beat the softened cream cheese, powdered sugar, and vanilla until smooth and creamy.
  4. In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until fluffy.
  6. Fold in the prepared cranberries, drained crushed pineapple, and dried cranberries.
  7. Stir in the mini marshmallows and ½ cup chopped walnuts.
  8. Spread the creamy cranberry mixture evenly into the white casserole dish, smoothing the surface.
  9. Sprinkle the remaining chopped walnuts and dried cranberries generously over the top.
  10. Cover and refrigerate for at least 4 hours, allowing the salad to firm up and the flavors to blend.
  11. Scoop generous portions or cut into soft squares and serve chilled.

Notes

  • Drain the pineapple well to keep the salad thick and creamy.
  • Chill overnight for better flavor and a firmer texture.
  • Use toasted walnuts for extra crunch.
  • Keep covered in the refrigerator for up to 3 days.
