Creamy Garlic Shrimp served over smooth mashed potatoes, creating a delightful dish that’s rich and flavorful.


Ingredients

  • 1 lb (450g) large shrimp, peeled & deveined
  • 4 large potatoes, peeled & chunked
  • 4 tbsp butter (divided)
  • ½ cup heavy cream (for mashed potatoes)
  • ¼ cup milk (for mashed potatoes)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream (for sauce)
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil potatoes in salted water until fork-tender (about 15 minutes).
  2. Mash the potatoes with 2 tablespoons of butter, heavy cream, and milk until smooth. Season with salt and pepper; keep warm.
  3. In a skillet, heat olive oil and cook the shrimp for 2–3 minutes per side. Remove shrimp from the skillet.
  4. Melt the remaining butter in the skillet; sauté garlic for 1 minute.
  5. Add heavy cream and chicken broth to the skillet; simmer for 3–4 minutes.
  6. Stir in Parmesan cheese until melted.
  7. Return shrimp to the skillet and coat them in the sauce.
  8. Serve the shrimp over the mashed potatoes and garnish with chopped parsley.

Notes

  • Ensure the shrimp are cooked just until they’re pink and opaque to avoid overcooking.
  • Feel free to add additional spices or herbs to the mashed potatoes for extra flavor.
  • This dish can be easily adapted for a low-carb option by substituting mashed potatoes with cauliflower mash.
