- 1 lb (450g) large shrimp, peeled & deveined
- 4 large potatoes, peeled & chunked
- 4 tbsp butter (divided)
- ½ cup heavy cream (for mashed potatoes)
- ¼ cup milk (for mashed potatoes)
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup heavy cream (for sauce)
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil potatoes in salted water until fork-tender (about 15 minutes).
- Mash the potatoes with 2 tablespoons of butter, heavy cream, and milk until smooth. Season with salt and pepper; keep warm.
- In a skillet, heat olive oil and cook the shrimp for 2–3 minutes per side. Remove shrimp from the skillet.
- Melt the remaining butter in the skillet; sauté garlic for 1 minute.
- Add heavy cream and chicken broth to the skillet; simmer for 3–4 minutes.
- Stir in Parmesan cheese until melted.
- Return shrimp to the skillet and coat them in the sauce.
- Serve the shrimp over the mashed potatoes and garnish with chopped parsley.
Notes
- Ensure the shrimp are cooked just until they’re pink and opaque to avoid overcooking.
- Feel free to add additional spices or herbs to the mashed potatoes for extra flavor.
- This dish can be easily adapted for a low-carb option by substituting mashed potatoes with cauliflower mash.
