- 1 pound chicken breast
- 8 ounces mushrooms, sliced
- 2 cups fresh spinach
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Sear the chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breast and cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
- Sauté the mushrooms: In the same skillet, add the sliced mushrooms. Sauté them until browned and have released their moisture, about 5 minutes.
- Add the orzo: Stir in the orzo and cook for 1-2 minutes until lightly toasted.
- Pour in the broth: Add the chicken broth. Bring to a boil, then reduce the heat. Let it simmer until the orzo is cooked and most of the liquid has absorbed—about 10-12 minutes.
- Mix in cream and spinach: Stir in the heavy cream and fresh spinach.
- Return the chicken to the skillet. Season with salt and pepper, cooking for another 2-3 minutes until heated through.
- Serve: Transfer to plates and top with freshly grated Parmesan cheese.
Notes
For a vegetarian version, skip the chicken and add extra veggies. Adjust the creaminess by adding more chicken broth if needed.
