Crispy Chicken Waffles Delight combines savory chicken tenders with deliciously fluffy waffles for a unique meal.

- 4 oz pork rinds
- 1 cup freshly grated Parmesan
- 1 large egg
- 2 Tbsp mayonnaise
- 2 Tbsp water
- Kosher salt
- Freshly ground black pepper
- 1 lb boneless skinless chicken breasts, cut into strips
- 4 large eggs (for waffles)
- 2 cups almond flour
- 1 cup shredded cheddar
- 1 cup milk
- 1 cup sour cream
- 1 tsp baking powder
- Kosher salt (for waffles)
- Freshly ground black pepper (for waffles)
- Cooking spray (for waffles)
- 2 Tbsp freshly chopped chives, for garnish
- Butter, optional
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment paper and grease generously with cooking spray.
- Add pork rinds to a food processor and pulse until fine crumbs form. Transfer to a shallow dish and combine with Parmesan.
- In a medium bowl, whisk together egg, mayonnaise, and water. Season with salt and pepper.
- Dip chicken pieces in egg mixture, letting excess liquid drip off. Coat chicken in pork-rind mixture, pressing to adhere, and place on the prepared baking sheet.
- Bake chicken until golden, about 25 to 30 minutes.
- Preheat a waffle iron. In a large bowl, whisk eggs, then whisk in almond flour, cheddar, milk, sour cream, and baking powder. Season with salt and pepper.
- Grease waffle iron with cooking spray. Following waffle maker directions, add 1/2 cup batter and cook until golden, about 4 to 5 minutes. Repeat with remaining batter.
- Serve chicken tenders with waffles. Garnish with freshly chopped chives and butter if desired.
Notes
- If you prefer the chicken to be spicier, consider adding cayenne pepper to the pork rind mixture.
- This recipe can be easily doubled for larger gatherings.
