- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 green bell pepper, sliced thin
- 1 red bell pepper, sliced thin
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 20 oz package refrigerated cheese tortellini
- 2 cups shredded mozzarella cheese
- Fresh chopped parsley for garnish
Instructions
- In a large skillet over medium heat, heat olive oil. Add ground beef and cook until browned, about 6–8 minutes. Drain excess grease.
- Add onion, peppers, and garlic to the skillet. Sauté 3–4 minutes until softened. Stir in Italian seasoning, salt, black pepper, and red pepper flakes.
- Transfer the beef and veggie mixture to the Crock Pot. Pour in beef broth and Worcestershire sauce. Stir well to combine.
- Cover and cook on low for 4–5 hours or high for 2–3 hours.
- Add tortellini during the last 30 minutes of cook time, ensuring they are submerged in the liquid.
- Sprinkle mozzarella cheese on top, cover, and cook for an additional 5–10 minutes until melted.
- Stir gently, garnish with parsley, and serve hot.
Notes
- For a spicier version, increase the amount of crushed red pepper flakes.
- Feel free to use frozen tortellini, just adjust the cooking time accordingly.
- This dish pairs well with a side salad or garlic bread.
