Description

A delicious and sweet side dish made with carrots, honey, and maple syrup, cooked to perfection in a crockpot.


Ingredients

  • 2 lbs. carrots, peeled and cut into coins
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • 2 tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Crockpot: Place the peeled and sliced carrot coins in the crockpot.
  2. Make the Glaze: In a small bowl, whisk together the melted butter, brown sugar, maple syrup, honey, salt, and pepper until well combined.
  3. Cook the Carrots: Pour the glaze over the carrots in the crockpot. Stir gently to ensure all the carrots are coated in the glaze.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours, until the carrots are tender.
  5. Finish & Serve: Once done, stir the carrots to coat them in the sauce again. Transfer to a serving dish and garnish with freshly chopped parsley.
  6. Serve warm.
