- Preheat the oven: Start by preheating your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper for easy removal.
- Prepare the brownie batter: In a medium saucepan, melt 1 cup of unsalted butter over low heat. Once melted, remove from heat and stir in 1 cup of granulated sugar and 1 cup of brown sugar until well combined.
- Add eggs and vanilla: Allow the mixture to cool slightly, then whisk in 4 large eggs, one at a time, followed by 2 teaspoons of vanilla extract.
- Mix dry ingredients: In a separate bowl, sift together 1 cup of all-purpose flour, 1 cup of cocoa powder, and ½ teaspoon of salt. Gradually fold the dry ingredients into the wet mixture until just combined.
- Bake the brownies: Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Prepare the Samoa topping: While the brownies are baking, combine 2 cups of sweetened shredded coconut and 1 cup of caramel sauce in a bowl. Mix until the coconut is fully coated.
- Assemble the brownies: After the brownies have cooled slightly, spread the coconut-caramel mixture evenly over the top. Place back in the oven for an additional 10 minutes to allow the topping to set.
- Finish with chocolate: Once out of the oven, melt 1 cup of chocolate chips in the microwave or over a double boiler. Drizzle the melted chocolate over the coconut topping.
- Cool and slice: Allow the brownies to cool completely in the pan before lifting them out using the parchment paper. Slice into squares and enjoy!
