Ingredients

  • 2 cups milk
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 (8 oz) container whipped topping, thawed
  • 1 (16 oz) package graham crackers
  • 2 medium apples, peeled and diced
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon
  • 1/2 cup chopped pecans (optional)

Instructions

  1. In a large mixing bowl, whisk together the milk and instant vanilla pudding mix until well combined. Let it sit for about 5 minutes until it thickens.
  2. Gently fold in the whipped topping until fully incorporated.
  3. In a separate bowl, mix the diced apples with the caramel sauce and cinnamon. If using, add the chopped pecans and stir to combine.
  4. In a 9×13 inch baking dish, layer half of the graham crackers on the bottom.
  5. Spread half of the pudding mixture over the graham crackers, followed by half of the apple mixture.
  6. Repeat the layers with the remaining graham crackers, pudding mixture, and apple mixture.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  8. Before serving, drizzle additional caramel sauce on top if desired and garnish with extra pecans.
