Description

A nutritious and easy meal prep using Costco’s chipotle chicken, perfect for post-workout recovery.


Ingredients

Scale
  • 30 oz chipotle chicken (entire bag)
  • 2 bags frozen green beans
  • 3 bell peppers
  • 1/2 red onion
  • 600 g Japanese sweet potato
  • 18 g BBQ sauce per meal

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the Japanese sweet potatoes into cubes.
  3. Roast the sweet potatoes in the oven for about 25-30 minutes until tender.
  4. While the sweet potatoes are cooking, chop the bell peppers and red onion.
  5. In a large pan, sauté the green beans, bell peppers, and onion over medium heat until the vegetables are tender.
  6. Add the chipotle chicken to the pan and stir to combine, cooking until heated through.
  7. Once the sweet potatoes are cooked, combine them with the chicken and vegetable mixture.
  8. Divide the mixture into meal prep containers and drizzle 18g of BBQ sauce on each serving.
