Ingredients

- 30 oz chipotle chicken (entire bag)
- 2 bags frozen green beans
- 3 bell peppers
- 1/2 red onion
- 600 g Japanese sweet potato
- 18 g BBQ sauce per meal
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop the Japanese sweet potatoes into cubes.
- Roast the sweet potatoes in the oven for about 25-30 minutes until tender.
- While the sweet potatoes are cooking, chop the bell peppers and red onion.
- In a large pan, sauté the green beans, bell peppers, and onion over medium heat until the vegetables are tender.
- Add the chipotle chicken to the pan and stir to combine, cooking until heated through.
- Once the sweet potatoes are cooked, combine them with the chicken and vegetable mixture.
- Divide the mixture into meal prep containers and drizzle 18g of BBQ sauce on each serving.
