Description

Delicious and tender lamb spare ribs coated in a flavorful spice rub and a sweet-savory glaze.


Ingredients

Scale
  • 2 lb lamb ribs
  • 1 tsp fennel seeds (toasted and crushed)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup water
  • 1/4 cup maple syrup
  • 1/4 cup ketchup
  • 2 tbsp BBQ sauce
  • 2 1/2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar

Instructions

  1. Preheat your oven to 300°F and position a rack in the lower-middle section. Mix the spices in a small bowl to create the dry rub.
  2. Pat the lamb ribs dry and coat with the dry rub. Place them on a roasting rack in a pan and pour the water into the bottom of the pan. Cover tightly with foil.
  3. Bake the ribs in the preheated oven for 2 hours.
  4. In a bowl, whisk together maple syrup, ketchup, BBQ sauce, brown sugar, Dijon mustard, and apple cider vinegar to create the glaze.
  5. Remove the ribs, brush them with the glaze, and return them to the oven uncovered for 25 minutes, brushing with additional glaze every 7-8 minutes.

Notes

  • For extra flavor, let the rub sit on the ribs for an hour before cooking.
  • Reserve some glaze to brush on right before serving for added shine.
