Delicious and tender lamb spare ribs coated in a flavorful spice rub and a sweet-savory glaze.
Ingredients

- 2 lb lamb ribs
- 1 tsp fennel seeds (toasted and crushed)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup water
- 1/4 cup maple syrup
- 1/4 cup ketchup
- 2 tbsp BBQ sauce
- 2 1/2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
Instructions
- Preheat your oven to 300°F and position a rack in the lower-middle section. Mix the spices in a small bowl to create the dry rub.
- Pat the lamb ribs dry and coat with the dry rub. Place them on a roasting rack in a pan and pour the water into the bottom of the pan. Cover tightly with foil.
- Bake the ribs in the preheated oven for 2 hours.
- In a bowl, whisk together maple syrup, ketchup, BBQ sauce, brown sugar, Dijon mustard, and apple cider vinegar to create the glaze.
- Remove the ribs, brush them with the glaze, and return them to the oven uncovered for 25 minutes, brushing with additional glaze every 7-8 minutes.
Notes
- For extra flavor, let the rub sit on the ribs for an hour before cooking.
- Reserve some glaze to brush on right before serving for added shine.
