Description

A quick and delicious Easy Shrimp Scampi with Pasta recipe perfect for busy weeknights.

Ingredients

Scale
  • 1 cup spaghetti cooked (or linguine)
  • 1 pound large raw shrimp
  • 1/2 cup dry white wine
  • 1/4 cup olive oil
  • 1/4 cup green onion chopped
  • 1/4 cup parsley chopped, fresh
  • 3 Tablespoon butter
  • 3 Tablespoon garlic minced
  • 1 Tablespoon chili flakes crushed
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 large lemon

Instructions

  1. Wash, peel, and de-vein (if necessary) the shrimp and set aside.
  2. In a large frying or cast iron pan, heat the oil and butter until just boiling.
  3. Add the garlic and lightly sauté until the color just slightly changes.
  4. Pour in the white wine and bring it to a boil. Continue boiling until about half the wine has evaporated.
  5. Place the shrimp into the pan evenly, and add the onion, chili flakes, salt, and pepper.
  6. Cook until the shrimp is bright pink/orange in color.
  7. Add the pasta and the parsley and mix thoroughly. Cook until the pasta is warm.
  8. Remove from heat and squeeze the juice from half of a lemon. Stir and enjoy!

Notes

  • Feel free to adjust the amount of chili flakes to your desired spice level.
  • Fresh parsley can be substituted with dried parsley, though fresh is recommended for better flavor.
  • Make sure not to overcook the shrimp to prevent a rubbery texture.
