Delicious cinnamon rolls made with fat-free Greek yogurt for a healthier twist.
Ingredients

- 2 cups all-purpose flour
- 1 cup fat-free Greek yogurt
- 2 tablespoons granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3 tablespoons brown sugar
- 1 tablespoon ground cinnamon
- 1 tablespoon unsweetened applesauce
- 3/4 cup powdered sugar
- 2 to 3 tablespoons skim milk
- 1/2 teaspoon vanilla extract
Instructions
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add Greek yogurt and vanilla extract, then mix into a soft dough.
- Transfer to a floured surface and knead gently for 2 to 3 minutes until smooth. Let rest for 5 to 10 minutes.
- Roll the dough into a rectangle about 1/4-inch thick.
- Spread applesauce over the dough, then sprinkle evenly with brown sugar and cinnamon.
- Roll the dough tightly into a log and seal the edge.
- Slice into 8 to 10 rolls and place in a prepared baking dish.
- Preheat oven to 350°F (175°C).
- Bake for 20 to 25 minutes until lightly golden.
- Mix powdered sugar, milk, and vanilla to create the glaze.
- Drizzle glaze over warm rolls and serve.
Notes
- For a richer flavor, add a pinch of nutmeg along with the cinnamon.
- Store leftovers in an airtight container in the fridge for up to 3 days.
