Description

Delicious flaky tarts filled with sweet plums and topped with a crunchy almond crumble.


Ingredients

  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup ice water
  • 4 pieces ripe plums, pitted and sliced
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 cup almond flour
  • 1/4 cup rolled oats
  • 1/4 cup slivered almonds
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Make the Tart Crust: In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cubed butter. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
  2. Slowly add ice water, one tablespoon at a time, mixing until the dough holds together. Form the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  3. Prepare the Filling: Preheat the oven to 375°F (190°C). In another bowl, combine the sliced plums, brown sugar, and cinnamon. Toss until the plums are well coated and set aside.
  4. Make the Almond Crumble: In a separate bowl, mix almond flour, rolled oats, slivered almonds, melted butter, vanilla extract, and a pinch of salt until crumbly.
  5. Assemble the Tarts: On a lightly floured surface, roll out the chilled tart dough to about 1/4 inch thickness. Cut into circles to fit your tart pans. Gently press the dough into the pans.
  6. Spoon the prepared plum mixture into each tart shell, then sprinkle the almond crumble generously on top.
  7. Bake: Place the tarts on a baking sheet and bake for 25-30 minutes or until the tarts are golden brown and the plums are bubbling.
  8. Cool and Serve: Let the tarts cool slightly before serving. They are delicious warm or at room temperature.
