Ingredients

  • 3 large yellow onions, thinly sliced
  • 4 cups low-sodium beef broth
  • 1 cup shredded Gruyère cheese
  • 2 tbsp unsalted butter
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. Caramelize the Onions: In a large pot, melt butter over medium heat. Add sliced onions and salt; cook for about 20-25 minutes until golden brown, stirring occasionally.
  2. Add Broth: Pour in beef broth and thyme, simmer for an additional 10 minutes.
  3. Cook Pasta: Boil salted water in a separate pot and cook pasta according to package instructions until al dente. Reserve some pasta water, then drain.
  4. Combine: Mix cooked pasta with the onion-broth mixture until well coated. Add reserved pasta water gradually if needed for consistency.
  5. Broil: Transfer mixture to an oven-safe dish, top with shredded Gruyère cheese, and broil for 3-5 minutes until bubbling and golden.

Notes

  • For a vegetarian version, substitute beef broth with vegetable broth.
