- 3 large yellow onions, thinly sliced
- 4 cups low-sodium beef broth
- 1 cup shredded Gruyère cheese
- 2 tbsp unsalted butter

- Salt and pepper to taste
Instructions
- Caramelize the Onions: In a large pot, melt butter over medium heat. Add sliced onions and salt; cook for about 20-25 minutes until golden brown, stirring occasionally.
- Add Broth: Pour in beef broth and thyme, simmer for an additional 10 minutes.
- Cook Pasta: Boil salted water in a separate pot and cook pasta according to package instructions until al dente. Reserve some pasta water, then drain.
- Combine: Mix cooked pasta with the onion-broth mixture until well coated. Add reserved pasta water gradually if needed for consistency.
- Broil: Transfer mixture to an oven-safe dish, top with shredded Gruyère cheese, and broil for 3-5 minutes until bubbling and golden.
Notes
- For a vegetarian version, substitute beef broth with vegetable broth.
- Feel free to add more cheese on top for extra flavor.
