A flavorful and juicy Greek Chicken Kabobs recipe, perfect for grilling or baking. This dish combines tender chicken marinated in a savory yogurt and herb mixture, served with optional tzatziki sauce.

- ½ cup plain Greek yogurt
- 3 or 4 cloves garlic, peeled and grated
- 1–2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- ½ lemon, juiced (about 1 ½ – 2 tablespoons)
- 1 ½ teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- ½ teaspoon dried rosemary, or more to taste
- 1 ½ – 2 pounds boneless skinless chicken breasts, diced into 1 ½-inch chunks
- Tzatziki sauce, for serving (optional)
- Fresh herbs (dill, parsley, mint), for garnishing (optional)
Instructions
- In a large bowl, whisk together Greek yogurt, garlic, olive oil, honey, lemon juice, oregano, paprika, salt, pepper, and rosemary to create the chicken marinade.
- Add the diced chicken to the marinade, toss well, cover tightly, and refrigerate for 30-60 minutes, or up to 8 hours.
- If using wooden skewers, soak them in water for at least 30 minutes.
- Thread the marinated chicken onto skewers and discard any leftover marinade.
- For grilling, preheat grill to medium-high heat and grill the skewers for about 3-4 minutes on each side, flipping until cooked through. Chicken is done at 160F; allow to rest for 5-10 minutes.
- For grill pan cooking, preheat the grill pan and cook skewers for 5 minutes, flipping and cooking another 3-5 minutes until done.
- For oven baking, preheat oven to 400F, place skewers on a grill rack over parchment, and bake for 20-25 minutes, flipping halfway through.
- Optional: garnish with fresh herbs and serve with tzatziki sauce, pita bread, or over salad.

- Marinating the chicken for 2-3 hours yields the best flavor.
